Here is what I did:
Bake potatoes in quantity for your family size. Cool before filling, be careful not to burn your self!
TIP: I like to brush my potatoes with olive oil, bake until the outsides are crispy. Cut in half. Scoop out some of the potatoes, fill and rebake them until the outside is super crunchy.
Scoop out the middle of your potato leaving thicks sides.
Fill with shredded extra sharp cheddar cheese.
Fill with hot chili of your choice.
Add some of your potato back.
Sprinkle more shredded cheese on top.
Bake until cheese is melted and bubbly.
Garnish suggestions to top your potato:
Sour cream, jalapeno peppers, olives, chopped bell pepper, sliced onions, salsa avocado slices, crushed tortilla chips, chopped tomatoes, shredded lettuce, refried beans, melted velvetta cheese, bacon crumbled and even dressings IE ranch, blue cheese.
