This is like my go-to recipe whenever I need a tender tasty piece of chicken breast as the main entrée or over fresh lettuce salad greens, over pasta, or even in a sandwich.

The recipe can either be made from scratch with our delicious fresh marinade or you can use a bottle of Italian or Greek salad dressing.

Another suggestion is to use, sandwiches, buttered pasta, mashed potatoes or chopped up for a topping on open-faced bruschetta.


We like to add a little hot sauce to ours. I try to keep the calories down since this is a healthier way to eat chicken.


This flavorful chicken can be so many different meals using any leftover meat.


You can grill, saute, bake, or even air fry.

Ingredients You Will Need


  • chopped fresh rosemary
  • chicken breasts sliced around 1/2 inch thick
  • minced fresh garlic
  • chopped fresh basil
  • olive oil for cooking
  • canola oil for cooking
  • salt, black pepper, and cayenne pepper to taste
  • lemon juice
  • dried oregano
  • dried or fresh parsley
  • salad greens
  • for a quick marinade use Greek or Italian bottled salad dressing overnight

One of the best ways I love chicken is on a skewer for picnics


You can cube this chicken and saute it then thread it on skewers for a quick picnic treat.


Grilling this chicken is a great way to prepare and cook this meal.


Served on a stick with grape tomatoes, some whole-cooked mushrooms, or whatever you love this Italian chicken is the best!

This is versatile chicken you can use so many ways. The flavors are light and perfect for summer salads, sandwiches and so much more.

ingredients:

  • 2 sprigs of chopped fresh rosemary
  • 2 boneless chicken breasts sliced around 1/2 inch thick
  • 3 cloves minced fresh garlic
  • 2 tablespoons chopped fresh basil
  • olive oil for cooking
  • canola oil for cooking
  • salt, black pepper, and cayenne pepper to taste
  • 1/4 cup lemon juice
  • 3 tablespoons olive oil
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon dried or fresh parsley
  • In a hurry?  Use a bottle of Greek or Italian Salad Dressing( also we have tried Catalina, Ranch and Poppy seed dressings  with all delicious results)

How to cook Italian Sauteed Rosemary Basil Chicken

  1. Place sliced chicken breasts in a zip lock bag, add the lemon juice, 3 tablespoons olive oil, oregano, basil, and parsley. 
  2. Marinate overnight or at least 3 hours. Pour out the lemon juice as best as you can before sauteing the chicken.
  3. In a large fry pan, add 1 tablespoon olive oil and 2 tablespoons of canola oil. Add the garlic, chicken, and rosemary. 
  4. Saute chicken on both sides until nicely browned around 5 minutes on each side or until juices run clear. The chicken's internal temperature must reach 165 degrees to ensure doneness. Use an instant-read thermometer for accuracy.
  5. Add the fresh basil and toss. Sprinkle with salt, pepper, and cayenne to taste. Drizzle with the rest of the olive oil and seasonings you like. 
  6. Perfect to top a garden salad, chicken salad, or as your entree with a side of vegetables.
  7. Note: if using salad dressing pour over 4 boneless chicken breasts and place in a ziplock bag overnight. Pour most of the marinade out and cook with one of the below methods. Chicken can be grilled for around 6 minutes on each side, baked at 400 degrees around 1 hour flipping every half hour, sauteed or slow-cooked on low 8 hours.
